If you are bacon cheeseburger lover, you can now enjoy a good burger without guilt. The Bacon Cheeseburger Quinoa Skillet will allow you to enjoy the taste of bacon without all of the fat, calories, and carbs. It is also gluten free which is great for those that cannot consume gluten.
This recipe is easy to prepare. It is a one pot meal and will be complete in under an hour.
- 1 pound low fat ground beef
- ½ medium onion, chopped up
- ½ tsp. salt
- 1/4tsp. black pepper
- 1 cup quinoa that has been rinsed and drained
- ½ tsp. cumin
- 6 oz. tomato paste
- ¼ cup apple cider vinegar
- ¼ cup Worcestershire sauce
- 1 tbsp. brown mustard
- 2 ½ cup water
- 6 slices of bacon, cooked and crumbled
- 1 cup cheddar cheese, shredded
- Lettuce for serving
- Tomato for serving
Heat a pan or a skillet on the stove over medium heat. Once the pan is hot, add the ground beef and the onions. Season it with salt and pepper. Cook until the meat is browned. Break up any chunks in the meat . Drain any grease that is in the pan.
Once the meat is drained, put it back on the stove. Add the quinoa. Cook for a minute. Add the cumin, tomato paste, vinegar, Worcestershire, mustard, and the water. Stir to combine the ingredients
Cover the pan and simmer over medium heat. Allow it to cook for 20 to 25 minutes or until the quinoa becomes tender. When the quinoa is just about done, heat up the broiler function in the oven.
Remove the pan from heat. On the top of the beef and quinoa mixture top with the bacon and the cheese. Put the pan under the oven broiler.
Cook it for 2 to 4 minutes or until the cheese has melted. The cheese will also have a slight brownness and a crunch to it as well.
If you do not want the cheese to get crunchy do not use the broiler in the over. Add the cheese to the pan while it is still on medium heat. Cover the pan. Allow the mixture to cook for 5 minutes or until the cheese has melted.
Once everything is cooked it is time to serve. There are different condiments that can be served with this meal. It is suggested to serve it with lettuce and tomatoes just like a hamburger.
You can serve this meal with additional condiments if you would like or even a salad dressing of your choice. This skillet recipe is healthier and better for the body then a traditional bacon cheeseburger.
